Class description: Learn how to make some of the most iconic pan dulce varieties using Bizcocho dough; a classic sweet dough that is used to make Conchas, Chilindrinas, Limas, and other delicious sweet breads. The four hour class will allow the student to understand the difference between an overnight and straight dough process. With over 25 years’ experience as a artisan baker and now bread scientist for a leading bakery ingredients supplier, Chef Alex will share his story about going from his family’s Mexican bakery and traveling the globe as a professional baker. He is excited to share his baking knowledge as he walks you through the entire process of mixing the dough, making and describing different toppings, and decorations for the beautiful Bizcocho variety.
